Introduction:Located in Dakaihe Village, Pu'er, the Linrun Estate produces high-quality Catimor variety coffee beans thanks to its exceptional ecological environment and strict organic farming practices. This article delves into the estate’s geographical advantages, specialty coffee processing methods, and the unique characteristics of the Catimor variety, helping readers understand what makes Yunnan coffee special and how to select and evaluate it.

Dakaihe Village in Pu'er City, adjacent to the Sun River National Forest Park, is home to the distinctive Linrun Estate, a coffee farm that thrives in harmony with nature. Renowned for its organic cultivation and meticulous craftsmanship—especially in the planting and processing of Catimor variety coffee—the estate showcases the potential of Yunnan’s specialty coffee.

Quality control at Linrun Estate begins right at the fresh cherry harvest stage. To ensure raw material excellence, the estate pays twice the market price for fully red cherries, increasing the red fruit ratio from 65% to 95%. This commitment ensures higher-quality beans for subsequent washed processing, laying a solid foundation for specialty coffee.

In terms of processing methods, Linrun Estate has moved away from traditional single-washed techniques and adopteda double wet fermentation washed process. Specifically, the coffee beans are soaked in fermentation tanks for 48 hours. Through this dual fermentation process, not only is the mucilage effectively removed, but the coffee’s body is also enhanced, acidity becomes smoother, and flavor complexity is increased. This innovative processing method reflects the estate’s deep understanding and application of Yunnan’s local climate and varietal characteristics.

Geographically, Dakaihe Village is situated between 22°02'–24°50' N latitude and 99°09'–102°19' E longitude, within a typical southern subtropical mountainous humid monsoon climate zone. The village’s average elevation ranges from 1,100 to 1,500 meters. The combination of low latitude, high altitude, rainy season humidity, and ample sunlight during the harvest season provides ideal growing conditions—placing it on the edge of the so-called “coffee growing golden belt.”

The Dakaihe Village Coffee Professional Cooperative was established in 2009 and currently has 50 member households, cultivating an area of 7,000 acres, primarily growing the Arabica varietyCatimor (Catimor P3/P4). This variety is a hybrid improvement derived from Typica and Robusta, known for its strong disease resistance and adaptability, while also exhibiting distinct fruity notes and moderate acidity—it is one of the main varieties in Yunnan’s coffee production.

Founded by the village party secretary Hua Honglin, Linrun Economic & Trade Co., Ltd. operates under a “company + base + farmers” business model, dedicated to developing organic specialty coffee. Among its plantations, a 1,000-acre growing area obtained EU organic certification in 2018, which not only affirms the quality of the growing environment but also serves as a certification basis for producing high-quality specialty coffee.

Linrun Estate insists on manual weeding and uses only organic fertilizers, avoiding chemical agents, in order to maintain healthy soil and a sound ecological environment. Additionally, the estate is equipped with a complete fresh cherry processing station and dry husking factory. The processing station is located in the well-watered center of the estate to ensure freshly harvested cherries are processed promptly each day. The husking factory is situated near the drying field and features spacious storage space along with two color sorters, ensuring stable and consistent green bean quality.

The year 2015 marked a turning point for Linrun Estate. The founder’s daughter, Meizi, returned to her hometown after graduating from university, bringing with her a passion for coffee and a drive to innovate in post-harvest processing. Each year before the coffee harvest season (around November), her team conducts tests on various processing methods, collecting data such as cherry sweetness levels, pH values during fermentation, and temperature and humidity of the drying environment—all aimed at identifying the most suitable coffee processing approach for Pu’er, Yunnan. These experiments not only improve the flavor profile of the coffee but also enable the estate to co-manage quality control with buyers, ensuring that each batch of coffee consistently meets high standards.

Through its dedication and innovation, Linrun Estate is helping to elevate Yunnan coffee toward specialty status. For coffee enthusiasts eager to explore flavors from different regions, understanding these behind-the-scenes cultivation and processing details will lead to a deeper appreciation of the unique qualities in every cup.
