Introduction:Cuban Crystal Mountain coffee is often hailed as the "Cuban Blue Mountain" for its rich, well-balanced flavor profile that rivals Jamaica Blue Mountain, making it a prized choice among many coffee enthusiasts. This article delves into its origin environment and bean variety characteristics, explores the reasons why medium roast is ideal, and provides actual City Roast parameters along with cupping evaluations to help you better understand the unique charm of this popular coffee.

Among the many specialty coffee beans, Cuban Crystal Mountain coffee has long enjoyed an excellent reputation. Although its name includes "Cuban Blue Mountain," it does not come from Jamaica but rather from the highland regions of Cuba, especially growing on slopes and valleys at altitudes of about 1,000 to 2,000 feet. The area enjoys stable climate, moderate humidity, and fertile, deep soil, all of which provide optimal growing conditions for coffee trees—resulting in beans with balanced flavors and delicate textures.

Cuban Crystal Mountain coffee beans are relatively large in size, with some even referred to as "elephant beans," reaching up to 22 mesh size, which makes them impressive both visually and by touch. Such beans typically contain rich sugars and flavor compounds, making them well-suited for medium-temperature roasting to preserve their natural sweetness and mild acidity, while avoiding the astringency or smokiness that can result from over-extraction.

For this roast, we chose City Roast, also known as medium roast. This roasting method highlights the original layered flavors of the coffee without being too light—which might bring out harsh acidity—or too dark—which could mask delicate aromas. The actual roast was performed using an LC80-II machine, with a total batch size of 500 grams. The charge temperature was set at 170°C, and throughout the process, we adjusted the heat and air damper gradually based on the beans’ reactions to ensure a smooth temperature curve.

The specific roast data is as follows: Starting at 170°C, through multiple stages of temperature and air damper adjustments, first crack occurred at the 12-minute and 30-second mark at 195°C. Roasting continued until the start of second crack around 215°C, with the final drop at 218°C to retain appropriate caramelization and aroma development. The overall roast time was about 16 minutes and 15 seconds, falling within the medium-to-dark range of City Roast. This effectively reduces noticeable acidity while bringing out a mellow sweetness and smooth mouthfeel.

In terms of cupping performance, this Cuban Crystal Mountain coffee demonstrates exceptional balance. The aroma scored a full 5 points, exuding warm and inviting roasted notes. While specific fragrance types are not distinctly identifiable, the overall aroma is rich and comforting. Acidity scored only 2 points, presenting as mild and not overly sharp, aligning with the taste preferences of most Asian consumers. Bitterness scored 1 point, almost undetectable, indicating well-controlled roasting without excessive carbonization.

The aftertaste performance is outstanding, scoring a high 5 points. The finish is long-lasting with a naturally sweet and smooth linger that effectively balances the overall flavor profile, resulting in a gentle conclusion. Body rated 4 points, with a silky texture and fine mouthfeel upon entry. Overall flavor complexity scored 4 points, featuring distinct layers—from initial aromas to mid-palate sweetness, to the aftertaste sweetness—each stage showcasing its own character. Roundness also earned 4 points, with a smooth and cohesive mouthfeel that is approachable for both novice and experienced coffee drinkers.

It’s worth noting that during this roast, considering that office colleagues generally prefer less pronounced acidity, we intentionally deepened the roast level slightly to further soften the acidity, resulting in a smoother and more rounded profile. According to feedback from tasters, this coffee delivers a notable sense of happiness and relaxation, making it particularly suitable for enjoyment in the afternoon or during focused work hours. It can effectively relieve stress and boost energy.

If you enjoy trying coffees from different regions, Cuban Crystal Mountain coffee is definitely worth a try. Not only does it offer a balanced flavor reminiscent of Jamaica Blue Mountain, but its relatively accessible price and high cost-performance ratio also make it a daily choice for many coffee lovers. Whether brewed via pour over, siphon, or French press, it showcases its delicate layers and aromas, making it a premium bean suitable for various brewing methods.

In summary, although Cuban Crystal Mountain coffee is often mistaken for Blue Mountain coffee, its own flavor profile and suitability for medium-temperature roasting are enough to secure its place in the specialty coffee market. If you’re looking for a coffee bean that boasts captivating aroma, balanced flavor, and moderate acidity and bitterness, consider adding it to your coffee bean selection list and personally experience the charm of coffee from the highlands of Cuba.
